Easy Milk Chocolate Cupcake Recipe

We’ve shared a few vanilla cupcake recipes on The Tray Bakers but it was about time we let you know about our milk chocolate cupcake recipe. The kids love it, and it is such an easy recipe they are even able to make it themselves now (I stay out of the way, as they are much messier bakers than me and I can’t quite cope!).

Easy-to-make, moist and delicious, with extra choccy-ness from the cocoa powder and grated milk chocolate. Top with your favourite icing, in our house it is either super-simple white glacé icing or luscious buttercream. Either way, yummy!

Cupcake Ingredients

  • 150g self-raising flour
  • 30g cocoa powder
  • 175g caster sugar
  • 175g softened butter
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 75g milk chocolate *
  • 1/2 tablespoon milk

* Note: don’t use a Galaxy or Cadbury bar (delicious as they are), but choose Milk Chocolate specifically for cooking as it will cope better with the higher temperatures

Cupcake Instructions

Pre-heat your oven to 160C (140C fan-assisted).

In a muffin tin (12), lay out your cupcake cases.

Grate the milk chocolate.

Place ALL of the ingredients into your favourite mixing bowl (it definitely makes cakes taste better!) and mix gently until fully combined.

Split the mixture evenly between the 12 cupcake cases. Use an ice-cream scoop or a measuring spoon to make sure you divide it evenly.

Put the baking tray into the oven. Bake the chocolate cupcakes for around 20-25 minutes. With a wooden skewer, you can check after 20 minutes. If the skewer comes out clean (i.e. no cake mixture sticking to it) then they are done and you can remove them from the oven. If there is some cake mixture on the skewer, put back in for a few more minutes (it is pretty much obligatory to adopt the squatting Bake Off pose here).

Once you are sure they are fully-baked, remove the baking tray from the oven. Don’t remove them immediately, let them cool for 5 minutes or so, then remove.

Pop them onto a wire rack to cool. Once cool, ice them with your icing of choice!

What can I say – this easy milk chocolate cupcake recipe has saved my kids from boredom in half term and kept our tummies very happy indeed!
