Simple Cupcake Recipe for Beginners

We make a batch of these cupcakes up regularly throughout the year, notably around birthdays and Christmas. Kids love getting involved, too! A very simple and straightforward recipe – sponge and the your decoration of choice. You could go down the buttercream icing route, or just decorate with chocolate and sprinkles!

Cupcake Ingredients (makes 24)

170g (6 oz) margarine or softened butter
170g (6 oz) caster sugar
3 large eggs (free range, of course)
170g (6 oz) good quality self-raising flour

Cupcake Method

When we say this is a simple cupcake recipe for beginners, we really mean it!

These cakes should take no more than 10-15 minutes to prepare and around 20 minutes to bake until golden on the top.

Always an important part of any recipe – preheat your oven, to 180C (160C fan).

Take a cupcake tray and line them with cases of your choice – either paper or silicone. You can buy some really pretty cupcake cases, or bright coloured silicone cases. If the kids are around they will help you to choose!

With a wooden spoon, beat the butter/margarine in a bowl until light and fluffy.

Add the eggs, one at a time. Continue to beat the mixture and mix the ingredients well.

Take a sieve and sift in the self-raising flour. Fold it in gently to the mixture.

Using a tablespoon, divide the mixture between the cupcake cases – you’re looking to make 24. You’ll probably have two of the standard 12-place cupcake/muffin trays, so you can bake them both at the same time.

They might bake at slightly different speeds if they are at different heights in the oven, so just be aware.

Bake at 180C (160C fan-assisted) for approximately 18-20 minutes. You’re looking for the tops of the cakes to be golden brown.

Take them out of the oven – and take the cases out of the tray (otherwise they’ll continue baking from the residual heat in the tray) and leave them to cool on a wire rack.

Decorate to taste!

Top Tip: Are you a fan of super-fluffy and light cupcakes? Try adding half a teaspoon of baking powder and half a teaspoon of bicarbonate of soda when you mix the dry ingredients.
